Fresh Pineapple Salsa + How to Cut a Pineapple

Comfort to me means devouring an entire basket of chips & salsa. Preferably with a margarita. If you want to venture out from the traditional tomato salsa, the tropical flavor of fresh pineapple and lime in this easy pineapple salsa recipe is perfect for summer. Or is mango jalapeño cucumber more your thing? Either way, bring on the chips and tacos!

Pineapple Salsa

I have 2 major phobias. One is falling down the stairs (this is not helped by the super steep, scary stairs in our current rental). The second is chopping things with big knives. So I usually avoid buying whole pineapples because, well, they scare me. Prickly outside + lots of chopping = disaster waiting to happen.

BUT. Someone finally showed me how to properly cut one, and it’s waaaay easier than my old method. It has opened up a whole new world of tropical flavors! Here’s how to do it:

Cutting top off of a pineappleCutting outside skin off pineaple

First, twist off the top. Then slice off both ends. Stand the pineapple on one end and remove the outer layer, cutting down and around the pineapple.

Quartering a pineappleCutting a pineapple Cut the pineapple into quarters. Remove the hard, inner piece of each section and cut into chunks. Easy peasy!

I have been OD’ing on pineapple since a recent cooking class at Whole Foods. Have you ever taken one? I think cooking classes are the perfect recipe for eating your way through summer.

Ingredients for pineapple salsaThe serrano pepper adds a kick to the salsa that balances out the sweetness. In my first attempt at this recipe I used a whole pepper, and it was a fiery salsa! Half of a pepper is more my style. If you don’t like a bit of heat, you can leave this out.

    I always buy pineapple presliced but this seems so easy (and cheaper!)

      I am not a pineapple fan But my hubby loves to eat it
      Fresh and he loves to slice it too So I will try this Hopefully it wil be a hit

    Ahh, I have the same big knife phobia! But I’ve started getting over it because those big knives do a much better job. I mean, I used to cut all my veggies with steak knives–ha. I so needed this tutorial!

    I must admit I’m a bit scared of pineapples too. Pumpkins really scare me as well. They’re so tough the knife quite often rebels against the skin. Thanks for the chopping tip!
