I’ve had a thing for raspberry creme soda ever since I was a kid. I loved the pretty pink color, creamy fruit flavor, and bubbles that tickled my nose. It felt extra fancy during special occasions, like the holidays. I love creating homemade sodas and thought it would be fun to create a little DIY Raspberry Creme Soda Bar – perfect for a last-minute holiday get-together!
Raspberry White Chocolate Creme Soda
A DIY soda bar is always popular at parties for grown-ups and kids alike–at least they are at my house! It’s really fun to let everyone make their own fizzy concoction. Aside from the seltzer water, all you need are several different syrups for variety and some fresh fruit for toppings (I prefer raspberries but go ahead and pick out whatever you like).
This raspberry creme soda recipe starts with a base of homemade raspberry syrup and a few tablespoons of International Delight White Chocolate Raspberry coffee creamer. (White Chocolate Raspberry is a seasonal variety only available for a limited time!).
In case you’ve never made your own simple syrup before, it couldn’t be easier. Simply place fresh raspberries, sugar and water in a small saucepan and bring to simmer. Let the mixture boil until the water has mostly boiled away and you’re left with a thick, rich syrup (about 5-10 minutes). When it’s done, strain out the raspberries so you’re left with a deep pink raspberry syrup perfect for soda, ice cream sundaes, you name it.
Fill up the bottom of your glass with syrup and creamer, then fill it up the rest of the way with sparkling water. The tangy raspberry syrup and sweet coffee creamer make a really yummy soda–just like an old fashioned egg creme, if you’ve ever had one of those.
For more of a dessert soda, top with whipped cream, extra berries and a sprig of fresh mint to make it look festive. Add a paper straw and start sipping!
